Southern Comfort Minted Ribs With Grilled Red Eye Sweet Potato Medallians

First time I’ve used a gas grill to make ribs in a few years… how I miss my smokers when I come to visit the parents. These ribs turned out delicious though, here’s a new recipe for those of you that like “wet” ribs.

1/4 cup southern comfort

1/4 cup mint jelly

1 tablespoon raspberry vinaigrette

1 teaspoon lee and perrins

1 tablespoon maple syrup

1 tablespoon bbq sauce

1/4 cup espresso or strong coffee.

1 teaspoon chipotle tobasco


1 package old el passo taco seasoning

2 tablespoon dried mint

2 tablespoons raspberry Iced tea powder

4 tablespoons light brown sugar

2 tablespoons kosher salt

1/2 tablespoon dried oregano

1 tablespoon fresh ground mixed pepper (red/black/green)

1 tablespoon onion flakes


1/4 cup apple cider

1/4 cup espresso or strong coffee

This recipe will make 2 racks of ribs..

Combine all the ingredients for the rub and mix with you fingers;

Remove the membranes from the ribs and sprinkle both sides liberally with the rub, place in refrigerator for at least 3 hours, no more than 12 hours.

Prepare bbq for indirect cooking, 250f-300f and place ribs in a rib rack or curled up standing on theirs ends. add equal parts hickory and apple wood for smoke as needed

Mix the spray in a food grade sprayer and spray the ribs every 20-30 minutes or so to keep the sugar in the rub from burning.

To make the glaze combine all the ingredients into a saucepan and cook for about 20 minutes whisking constantly until the mint jelly dissolves and the liquid reduces a little.

When the ribs nearly pass the tear test (ribs will pull apart with a little force) place individually in tin foil pouch and apply the glaze and wrap tightly, you want the steam to stay in as much as possible, cook for an additional 35 minutes. remove from foil and place over direct flame for a few minutes to caramelize the glaze.

Sweet ‘Tater Medallions

Peel 3 medium sweet potatoes and cut into 2 inch thick medallions. brush with olive oil and grill till you get some nice grill marks, place on deep plate and add 1/2 cup espresso or strong coffee and cover with plastic wrap and microwave for 3 minutes on high, drain coffee mixture and serve.
